Halloumi & Courgette Skewers | Charalambides Christis

Ingredients

  • 1 Pissourkotiko Traditional  Halloumi, Charalambides Christis, cut in strips 3x1 cm
  • 2 Courgettes, thinly sliced
  • 1 tbsp EVOO, Extra Virgin Olive Oil
  • 4 skewers

For the sauce:

  • 3 tbsp Fresh Parsley, finely chopped
  • 3 tbsp EVOO, Extra Virgin Olive Oil
  • 40ml Lemon Juice
  • 1 tsp Dry Mint
  • ¼ tsp Fine Sea Salt
  • ¼ tsp freshly ground Black Pepper

Instructions

  1. Make the sauce by combining all the ingredients in a bowl. Toss in the cut halloumi and make sure that every piece is covered with sauce.
  2. Place a sliced courgette on your bench and place 1 halloumi piece at the beginning of the courgette and fold carefully. Put it on a skewer along with 2 more, total 3.
  3. Add a frying pan on medium/low heat and pour the oil. A minute later place the skewers in the pan and shallow fry until nicely coloured on both sides.
  4. Place on a serving plate and drizzle more of the sauce.
