Colorful salad with cherry tomatoes, pomegranate and Charalambides Christis pissourkotiko traditional halloumi!

Ingredients
- 200 g.. cherry tomatoes, cubed
- 100 g. bell pepper, cubed
- 100 g. pomegranate seeds
- 50 g. red onion, cubed
- 10 ml pomegranate molasses
- 150 g. halloumi, cubed
- 50 ml olive oil (plus 1 tbsp for frying the halloumi)
- 20 g. chopped coriander
- 20 g. finely chopped mint
- Salt and pepper to taste
Instructions
- Heat a pan over medium heat and add 1 tablespoon of olive oil. Fry the halloumi cubes for about 1 minute, turning until they are golden on all sides.
- In a large bowl, combine the cherry tomatoes, bell pepper, pomegranate seeds, red onion, pomegranate molasses, olive oil, coriander, and mint. Add the fried halloumi.
- Season with salt and pepper to taste, toss well, and serve.
