‘’Halloumoti’’ – Halloumi Cheese Pies

Ingredients

  • 2 packs of Pissourkotiko Traditional Goat and Sheep Halloumi Charalambides Christis (cut into cubes)
  • 4 tablespoons mint leaves (finely chopped)
  • 600 gr. all-purpose Flour
  • 1 sachet of instant Yeast
  • ½ cup Olive oil
  • ½ cup Fresh milk (lukewarm)
  • ½ tablespoon of Sugar
  • ½ cup Water
  • ½ teaspoon Salt
  • 2 Eggs (beaten)
  • A little Sesame seeds

Instructions

  1. Place the flour and yeast in the mixer bucket and mix briefly to combine the two ingredients. Then add the olive oil and mix well with the dough hook attachment (if you do not have a mixer, you can do it by hand).
  2. Then add the warm milk and continue stirring. Add the sugar, water, and salt. Continue kneading (the dough should not stick to your hands, if you still need a little more flour, add some until the dough is soft and elastic).
  3. Transfer the dough to a floured surface and knead well with your hands.
  4. Form the dough into a large ball and put it in a bowl and use plastic wrap or a towel to cover it. Leave the dough in a warm place to proof for 1 hour.
  5. When it is ready, transfer it back to a floured surface and work it with your hands, then add the halloumi and the mint. Continue kneading.
  6. Roll and shape the halloumi pies into round balls and place them on a baking sheet, keeping a distance from each other.
  7. Cover again with a towel and leave for 45 minutes in a warm place.
  8. When they are ready, brush some of the beaten egg and sprinkle them with sesame seeds.
  9. Finally, bake them in a preheated oven at 180 degrees for 35-45 minutes, until golden brown.
