Charalambides Christis halloumi with cherry tomatoes and honey.

Ingredients

  • 400 g. Charalambides Christis Halloumi
  • 40 Cherry Tomatoes (red and yellow, halved)
  • 80 ml Olive Oil
  • 80 ml Apple Cider Vinegar
  • 100 g. Honey
  • Plenty of Fresh Basil Leaves
  • A bit of Toasted Sesame Seeds for serving
  • Salt & Pepper

Instructions

  1. In a large bowl, combine the cherry tomatoes, olive oil, apple cider vinegar, honey, and basil leaves. Season with salt and pepper, then mix everything well. Cover the bowl with plastic wrap and set it aside in a cool place.
  2. In a deep pan, bring water to a boil. Place the halloumi in the boiling water and let it cook until it softens.
  3. Using a slotted spoon, transfer the halloumi onto a cutting board and slice it into thick pieces.
  4. Take the bowl with the marinated cherry tomatoes and transfer them onto a serving platter.
  5. Finally, add the sliced halloumi on top of the salad. Sprinkle with toasted sesame seeds and extra basil leaves.

Tip: Add some lemon zest for an extra flavour boost and serve with toasted sourdough bread.
