Halloumi-Stuffed Dates
Ingredients
24 Jumbo Medjool Dates, cut in half and pit removed
1 Halloumi, Charalambides Christis
4 Skewers
EVOO, Extra Virgin Olive Oil
½ Orange, zested
1 tbsp Za’atar
Few Mint Leaves
Instructions
Start with the halloumi by cutting it in slices and then in long cubes of about 1.5cm x 2.5cm. Keep aside.
Then cut the dates lengthwise in half and remove their pit.
Push each halloumi cube into each date and pass them through the skewers, 5-6 of them for each skewer.
Place a griddle pan on high/medium heat and drizzle with a bit of oil. A minute later add the skewers and grill on each side for about 4’ and until nicely char marked.
Place in a serving plate, drizzle with oil, sprinkle with the orange zest and the za’atar. Finally add the mint leaves on top and serve.
