Halloumi Avocado Tartare
Ingredients
½ Pissourkotiko Traditional Goat & Sheep Halloumi, Charalambides Christis, finely diced
15ml Lemon Ponzu Sauce
1 tbsp Sweet Chili Sauce
1 tbsp Shallot, finely chopped
1 tbsp Grain Mustard
1 Lime, zested
½ tsp Sesame Seeds, for garnishing
1 tsp Fresh Chives, chopped, for garnishing
For the Avocado Layer
1 Large Avocado, peeled and diced
15ml Lime Juice
1 tbsp Fresh Coriander, finely chopped
1 tbsp Fresh Chives, finely chopped
¼ tsp Fine Sea Salt
¼ tsp freshly ground Black Pepper
Instructions
Add into a bowl the avocado layer ingredients, mix gently and keep aside.
Finely dice the halloumi and add into another bowl. Drop in the rest of the ingredients and allow to marinate for about 15’.
Assemble the tartare by adding in a tall round cookie cutter, or a ring mold, half of the avocado mixture and press well. Add on top the halloumi mixture and press gently.
Finally add on top the remaining half of the avocado mixture, press gently and carefully remove the cookie cutter.
Garnish with the sesame seeds and the chives and serve.
