Ingredients

50g Halloumi, Charalambides Christis

5 Vartika White Figs,

½ tsp Dry Mint, ground

Handful of Wild Purslane

1 tbsp Pistachios, chopped

Instructions

Take 4 figs and peel them. Cut in half and place in a flat dish.

Gently press them with a round flat surface, such as the base of a large glass, to thinly flatten them.

Grate on top the halloumi and sprinkle on top the dry mint. Add the purslane and the pistachios.

Finally cut the remaining fig in quarters and add on top.
