  • 3 medium aubergines
  • 3 tablespoons olive oil
  • 3 large tomatoes (in slices)
  • 1 pinch of sugar
  • 1 teaspoon oregano
  • 1 tablespoon fresh mint (finely chopped)
  • ½ cup of Charalambides Christis Kefalotyri (grated)
  • A few leaves of fresh rocket
